Drawing from their various professional and cultural backgrounds, João and his team create menus that display an equal love and respect for authentic traditional dishes as they do for innovative and contemporary ones. João himself sources all the ingredients from privileged and trusted vendors in Paris, whose produce comes from small producers of organic goods and ethical ingredients

Applying this individual approach to menu conception, João also offers a consulting service for new businesses, supporting new restaurants in creating custom-made menus and the training to realise them. Additionally, he shares his knowledge through online cooking tutorials and is available to host culinary workshops.
